An ancestral agricultural tradition
In the past, Saint-Martin's agricultural products were renowned for their flavor and quality. Farms and mountain pastures still play an active role in the region's life and contribute greatly to maintaining biodiversity.
It is therefore natural to find beef, lamb, and goat meat and charcuterie in our shops, as well as the renowned tommes and cheeses from our dairy or alpine cheese dairies.

In summer and winter alike, you can enjoy a delicious raclette, a hearty Tsarfion (a traditional dish made with cabbage), or a plate of dried meat, cured ham, and smoked bacon accompanied by traditional rye bread. This traditional recipe is prepared on request or for special occasions in the restaurants of Saint-Martin. Enjoy (in moderation) a Solaris (white wine from Ossona) or a Divico (red wine). Don't forget to put a carafe filled with fresh, refreshing water from the Embruns spring on the table.

Many products carry the AOP label, the Valais brand, or the Val d'Hérens label. This guarantees local origin and recognized quality.

Guests of Saint-Martin can immerse themselves in this agrotourism world during their walks along the bisses (traditional irrigation channels) or across the hay meadows, carefully maintained by our dedicated farmers.
Up in the mayens, before the cattle are taken up to the alpine pastures (inalpe) or after their return (désalpe), visitors of all ages will have the pleasure of encountering small herds of Hérens cows. A little further on, sheep and lambs can be seen grazing peacefully.

During the summer, the livestock is gathered on the alpine pastures of A Vieille, Loveignoz and La Louère. Up there, some of the finest raclette cheeses are produced thanks to nutrient-rich alpine meadows. If you are hiking between these three alpine pastures, be sure to stop at the various mountain refreshment huts to enjoy a cheese dish or a light snack.

Water is the only truly essential drink for humans. To always have it on your table, order your “L’eau de la Maya” carafe, available at the Saint-Martin Tourism Office.

Outside the summer grazing season, the famous Valais AOP raclette cheeses can be found at the Saint-Martin dairy. They pair perfectly with a refreshing Fendant wine from the Cave du Paradou in Nax.

Further down the valley, in Ossona, a large herd of goats welcomes visitors. The innkeepers will offer one of their homemade specialties, mainly prepared with local products. If you ask them, they will gladly share the secrets of this place, which has been preserved and restored by passionate defenders of our rural heritage.

Saint-Martin has also long been a land of art and craftsmanship. Among others, you can discover the work of a master glass artist and local sculptors. Do not hesitate to contact them if you are interested in their creations. Renowned companies, recognized for their expertise, also offer services in construction, renovation and maintenance.
